The reason I decided to do pico de gallo next is because it goes with our supper tonight, which I will be blogging about later. I’ve been making this pico de gallo for years and it’s so easy, but super tasty. Anytime I take this to a party the bowl is licked clean. It certainly is a good appetizer on a hot summer day, but we also use it as a side to many of our meals. I love summer time when my dad gives me tomatoes from his garden, I think I make this just about once a week. One thing I love to put pico on is eggs in the morning. I even have my oldest eating it on her eggs with me, pico de gallo is a favorite of hers, she gets excited whenever I make it. I sure hope you try this recipe and enjoy it as much as we do. - 3 tomatoes
- 1 red onion
- 1 jalapeno (Remove the seeds, unless you like it hot!)
- 1 handful cilantro
- juice from 1 lime
- 2 tsp minced garlic
- 1sp salt
Dice the tomatoes, onion, jalapeno, and cilantro. Add the juice from the lime, minced garlic, and salt. Stir and taste. Refrigerate until you are ready to serve.
