I’ve been making these for a few years now, and they are a nice dessert type snack. I don’t know about you, but I have a terrible sweet tooth and I try to find healthier ways (failing most times) to indulge in sweets. This one is a huge win, it tastes good and the ingredients are lite. I also like that it’s frozen so you can just go grab one whenever you want and they last a long time. My kids also really enjoy them and it’s nice knowing it’s not loaded with sugar. Today I made them with strawberries, but in the ingredients picture you will notice blueberries. I started out thinking blueberries, but changed to strawberries mid-recipe. I’ve made this with blueberries and raspberries also and sometimes I even use 2 kinds of fruit for a mix berry. The possibilities are endless!
- 1/2-1 cup of pureed strawberries (I used about 6 big strawberries)
- 8 oz of lite cool whip
- 1 cup of greek yogurt
- 10 1/2 graham crackers
Puree the strawberries in a blender. In a mixing bowl combine the strawberry puree, greek yogurt and cool whip. Mix it all together. In a 9 inch baking pan line the bottom with half the graham crackers. Pour the strawberry mixture on top and spread over the crackers evenly. Now put the remaining graham crackers on top. Put in the freezer for at least 4 hours.
