If you are like me there are many times that I start my day out with no plan for supper. Being a stay at home mom I have the luxury of not having to have my meals planned out and ready to go each day. Some days it might be 3:00pm and I still don’t know what I am going to make. This chicken, broccoli and garlic pasta is a go to for me on days like that. It’s super easy to make and I almost always have all the ingredients on hand. Today I used fettuccine noodles because that is what I had, but you can use spaghetti, linguine, or any noodle you prefer. Tonight at supper my 3 year old was saying, “mmm yum”, with every bite and she is the pickiest eater in our house. It must be good! Anything she likes gets made multiple times. This is another one of those pasta dishes that is just as good, if not better the next day. I hope you enjoy this pasta dish as much as we do.
- 2 large or 3 small chicken breasts, diced
- 2 Tbsp. extra-virgin olive oil
- 8 oz. fettuccine noodles
- 1/3 cup extra-virgin olive oil
- 1/2 tsp. red pepper flakes
- 3 cloves of garlic
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1 bag broccoli florets
Dice the chicken breast in small pieces, season with your favorite seasoning. I use Lawry’s Salt most of the time. Sometimes I just use some fresh minced garlic, salt and pepper. Over medium heat, heat 2 Tbsp. olive oil, add the chicken. Cook the chicken until done and set aside.
Cook the noodles according to package. Before you drain the water from your noodles reserve a 1/3 cup.
In a small sauce pan add the oil, red pepper flakes, garlic, salt, and pepper. Heat on a medium-low heat until the noodles are done.
Cook your broccoli according to package.
Add the oil mixture, chicken, broccoli, water from pasta to the noodles and mix well. Add some parmesan cheese and serve.
